Coriander-Lime Chicken Meatballs

Delicious. Make the perfect little chicken balls that the whole family will love.

Ingredients

  • 500g chicken mince
  • 2 green onions, chopped
  • ¼ cup minced red capsicum pepper
  • 2 Tablespoons chopped coriander
  • 2 cloves garlic, pressed or minced
  • juice of ½ lime
  • 1 egg, whisked
  • ½ cup gluten-free bread crumbs
  • ½ teaspoon salt, pepper to taste

Directions

  1. Preheat oven to 200°C degrees then line a tray with foil and spray with nonstick spray. Set aside.
  2. To a large bowl add all ingredients then mix with your hands until just combined. Form into 16 meatballs (helps to wet hands slightly while rolling) then place onto prepared baking sheet.
  3. Bake for 16-18 minutes or fry till browned all over.
