Grilled Caramel Peach, Pineapple, and Mango Kebabs

These delicious tasty, caramelised kebabs with peaches, pineapple and mango will want you having more each time!

Ingredients

  • 2 tbsp butter, melted

  • 1 fresh pineapple

  • 2 large peaches

  • 2 large mangos

  • For the Brown Sugar Caramel Sauce

  • 3 tbsp butter

  • 1/2 cups brown sugar

  • 1/3 cups honey

  • 1/2 cups heavy cream

  • Ice-cream to serve

     

Directions

  1. Cut the fruit into chunks that are as evenly sized as possible. Thread the fruit evenly between 10-12 kebab sticks

  2. To make the brown sugar caramel sauce, add butter, brown sugar, and honey to a heavy saucepan over medium heat. Stir periodically as butter melts. Let come to a boil and let cook for two minutes. Remove from heat and stir in the cream until smooth. Stir in lemon juice and serve immediately with grilled fruit kebabs.

  3. Heat BBQ up. Melt butter and use a pastry brush to gently coat the fruit on each skewer. Place on the BBQ and let cook for 5-7 minutes then flip and repeat.

  4. Remove from the grill and let cool, then serve with the caramel sauce and a scoop of ice-cream
