Grilled Chicken and Salad Wraps 

A delicious chicken wrap with silvered almonds, celery and dried cranberries for a twist! It’s easy to prep and comes out very tasty.

Ingredients

  • 2 chicken breasts

  • ¼ cup BBQ sauce

  • 1 tbsp parsley flakes

  • Salt and pepper

  • 1/2 cup dried cranberries

  • 3/4 cup celery, chopped

  • 1/2 cup slivered almonds

  • ¾ cup mayonnaise

  • ¼ cup Greek yoghurt

  • 1 tablespoon lemon juice

  • 1 tbsp wholegrain mustard

  • 2 tbsp fruit chutne

  • 2 large handfuls baby spinach

  • 6 wraps

Directions

  1. Slice the chicken breast into thin strips, add to a bowl and mix the BBQ sauce, parsley, salt, and pepper into it, mix well then aside to marinate for at least 10 minutes.

  2. While chicken in marinating, prepare the sauce. Add mayonnaise, yoghurt, lemon juice, mustard, and relish into a bowl, and stir until combined.

  3. Heat the BBQ up and cook your chicken until each piece is cooked all the way through. Once chicken is cooked, allow to cool slightly before dicing the pieces up into small cubes.

  4. In a large bowl, add chicken, cranberries, celery, almonds, mayonnaise mixture, and baby spinach. Mix until everything is combined then spread mixture evenly between 6 wraps.
