Mango Chicken Salad

A fresh and healthy chicken mango salad with a full flavoured mango dressing!

Ingredients

CHICKEN MARINADE

  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1 teaspoon garlic, crushed
  • Salt and pepper

SALAD

  • 450g chicken
  • 1 Tbsp olive oil for cooking
  • 6 cups cos lettuce
  • 1 cup cherry tomatoes, chopped
  • 1 cup cucumber, diced
  • ½ cup spring onion, sliced
  • 1 avocado, diced
  • 2 mangos, peeled and diced (leave ¼ cup aside for dressing)
  • 3 Tbsp fresh coriander leaves, chopped
  • 1 small red chili, chopped *optional

DRESSING

  • ¼ cup mango, diced/smooshed
  • 3 tsp olive oil
  • 1 tsp sesame oil
  • ½ tsp ginger, grated
  • 1 tbsp soy sauce
  • 3 tbsp lime juice
  • ¼ cup coriander leaves
  • Salt and pepper

Directions

  1. Place the ingredients for the marinade in a bag and mix together, with the chicken.

  2. Cook the chicken for about 3-5 minutes on each side until cooked through. Cover the chicken with foil and let rest before slicing.

  3. Place the chicken on top of the salad and drizzle with the mango salad dressing.
