San Choy Bau (peanut and sesame free) 

This is the perfect easy and fresh summer dinner recipe. Loaded with veggies, lots of flavour and seriously easy to make!

Ingredients

  • 3 tbsp coconut oil
  • 500g minced meat (any)
  • Ice berg or cos lettuce (to make bowls)
  • 1 brown onion, diced
  • ½ cup chopped spring onion (white parts – use the green to garnish)
  • 2 cloves garlic, chopped
  • 1 tsp finely grated ginger
  • 1 cup green beans & snow peas, chopped
  • 1 cup sliced mushrooms
  • 1 cup chopped greens (spinach, kale, cabbage or even carrot)
  • ½ cup water chestnuts
  • ¼ cup soy sauce
  • 2 tbsp maple syrup or raw honey
  • ½ cup chopped coriander
  • 1 lime, juices & zest
  • salt & pepper to season

EXTRA’S: avocado sliced or diced, bean sprouts or sunflower broccoli sprouts, chilli if you wish for a spicy bite

Directions

  1. Heat a large pan or wok on a medium-high heat. Add in the coconut oil, garlic, onion, spring onion, ginger and cook for a minute or 2.

  2. Stir in the mince and veggies and cook for another 5 mins, stirring occasionally to break up the lumps and brown until cooked through.

  3. Pour in the soy sauce, honey and lime juice through the mince and add in the nuts & chilli (if using). Cook for another minute or 2 until heated through.

  4. Remove the pan from the heat, add the sprouts, extra herbs and season to taste, adding more aminos if needed.

  5. Place the lettuce cups on your plates and spoon in some of the mince mixture. Garnish with the diced avocado and a squeeze of lime and devour the lot because this is an ace veggie loaded and delicious recipe.
