Apple Cinnamon Blondies

These cinnamon-spiced blondies are a nice and chewy snack with a lovely crinkly top and juicy apple chunk inside!

Ingredients

  • ¾ cup (170g) unsalted butter, melted
  • ½ cup (100g) sugar
  • ½ cup (100g) light brown sugar
  • 1 large egg + 1 egg yolk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup (125g) plain flour
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 2 small apples, peeled, cored, and chopped into small cubes.

Directions

  1. Preheat the oven to 180°C.
  2. Line an 20 x 20cm square baking pan with aluminium foil or parchment paper and spray with baking spray. Set aside.
  3. Whisk together the butter and sugars until smooth and combined. Add the egg, egg yolk, vanilla, and salt, and whisk vigorously until smooth and combined.
  4. Fold in the flour, and spices until completely combined, then fold in the apples.
  5. Spread the batter evenly into the prepared pan, and bake for about 25 – 30 minutes, or until the centre is no longer jiggly and a toothpick inserted comes out clean. Do not over-bake.
  6. Allow to cool completely in the pan on a wire rack/fridge before cutting into squares.
