Balsamic Tomato & Feta Pasta

A balsamic tomato and feta pasta with delicious taste and is easy on your wallet!

Ingredients

  • 400g cherry tomatoes
  • ¼ cup balsamic vinegar
  • 1 tbs brown sugar
  • 2 cloves garlic
  • 375g penne rigate
  • 60g baby rocket leaves
  • 60g Danish feta, crumbled
  • 2 tbs any seed & nuts mix

Directions

  1. Preheat oven to 200°C/180°C fan forced.
  2. Place tomatoes, vinegar, sugar and garlic in a small baking dish. Roast for 15 minutes or until tomatoes begin to blister.
  3. Meanwhile, cook pasta according to packet instructions.
  4. Drain, reserving ¼ cup cooking liquid. Return pasta to pan.
  5. Add tomato mixture, rocket and reserved cooking liquid to pan and toss to combine.
  6. Divide pasta among serving bowls. Top with feta and seeds. Season and serve.
